2006 Thistle Hill Semillon
Tasting Notes
A bright, sparkling lemon colour with tinges of green, this lovely Semillon has a rich bouquet of tropical fruit aromas. The palate is crisp and fresh, with hints of citrus and tropical lime. This wine is drinking well now and will continue to mature for a few more years.
Winemaking Notes
Three tonnes of Semillon fruit were picked at Miramar Vineyard on the morning of 16th February 2006. The wine (4,000 L) was racked on 18th Feb, with 500g EC1118 yeast added. On 1st March it was 14 degrees C and .5 Baume and 1 g/L Ta+ was added before racking into oak barrels.
The wine was racked on 3rd August and 60 mg/LS added. Four kg of bentonite was added on 7th August and 80 gm sulphur. The wine was earth filtered on 21st August, and 5 g/L sulphur added on 26th August as a final adjustment. The wine was bottled on 27th August … 1000 bottles.
