2006 Thistle Hill Chardonnay
Tasting Notes
This elegant Chardonnay has a delicate bouquet of fresh lemon and peach. The palate shows fresh lime and stone fruit flavours and a subtle French oak finish. Serve only slightly chilled to allow the delicate characters to express themselves fully.

Winemaking Notes
The 3.2 Hectares (8 acres) of Chardonnay was picked on 02/03/06 at a temperature of 12.3 degrees and a baume of 12.7. The juice was settled for 2 days at 16 degrees C then the clear juice was racked and seeded with Lalvin EC - 1118 yeast at 250 mG / L. The temperature of the juice was maintained at between 12 and 18 degrees C during fermentation and fermentation was completed by 24/4/06. Approx 30% of the wine was fermented in new Sirugue French oak barriques (200L barrels). 15 mG / L S was added on 20/08/01 to ensure the wine was micro- biologically stable.
The wine was heat and cold stabilised and filtered with medium earth on 03/10/06. Final adjustments were made on 9/10/06 and the wine was bottled on 10/10/06.
